Why is Total Sales (In Progress)' versus 'Total Sales (Since Project Creation)' figure in the Order Sales Statistics Administration Centre interface different?

A question was asked where within Administration Centre, under the Statistics menu, within the Sales Summary interface, after clicking on the More Info button, in the Order Sales Statistics interface, why would the two sales figures displayed "Total Sales (In Progress)" figure and "Total Sales (Since Project Creation)" have a different value? Can you explain how these totals are determined?
